Visits to malls and looking at those chocolate cookies were quite irresistible. As a family, we are chocolate freaks! My son who is an avid reader started with the Geronimo series a few years back. One of them had a nice recipe for chocolate cookies. And so we started experimenting with this recipe and finally came up with this one. It stayed with us for years on and I have never once found anyone who did not like this. Since my son was responsible for finding the recipe and helping to tweak it to make it healthier we called it Allan’s stilton cookies.
Allan's Stilton cookies
Equipment
- OTG
- Mixer + Big Mixer Jar
- Measuring Cup
- Teaspoon
- Bowl (big enough to mix ingredients)
Ingredients
- 1¼ Cup Whole wheat flour
- ¼ Cup Almonds powdered
- ⅛ Cup Flax seeds powdered
- ⅔ Cup Brown sugar powdered
- ½ tsp Salt
- ½ tsp Baking soda
- 1 Cup Chocolate chips or chopped chocolate chunks
- 1 Egg room temperature
- ½ Cup Oil
- ½ tsp Vanilla essence
Instructions
- Whip wheat flour, flax seeds, almonds, salt, and baking soda for 10 sec in mixie. Do this 5 times. OR You can alternately sieve the dry ingredients thrice.
- Pour the above mixture into a mixing bowl
- Whip oil, egg, sugar, and vanilla essence for 10 sec in the mixie. Do this 3 times.
- Add the above liquid into the mixing bowl and mix everything. Do not over mix.
- Add the chocolate chunks/chips to this mixture and make it into a log shape and wrap it with plastic wrap (cling film).
- Refrigerate the log for an hour.
- Preheat the oven to 250°C for 10 minutes. Prepare your baking tray.
- Take the log out of the fridge and slice them ½ inch in thickness.
- Lay the cookies onto the baking tray spacing them out.
- Bake at 180°C for 15 to 20 minutes.
- Serve warm or cold, they run out quickly.
Notes
- I used oil, but you can use the same quantity of butter too!
- Coconut oil, sunflower oil, olive oil- any of them work well.
- I have tried this recipe with Cashews instead of Almond and they taste good too.
- I have tried it without chocolate chips and used blueberries, and they are also another alternative.
